There are times (yes, believe it or not) when my dogs have breath that’s, well, not that fresh. These are tasty, healthy and will freshen their breath too.


Plus, you’ll know exactly what went into them to ease your mind that your dogs are eating real food that’s good for them.


I love my dogs so much and I’m always baking them special, little treats. You should see their faces light up – they just know that what I’m doing is for them. So cute!

Mint & Parsley Doggy Biscuits


Type: Home Remedy Recipe
Prep Time: 15 min
Cook Time: 2 hr
Yield:  ~ 80 doggy biscuits


Ingredients:



  • 3-4 cups cooked rice – without using salt

  • 6 tbsp freshly chopped Parsley – If using dried, about 4 tbsp

  • 6 tbsp freshly chopped Mint – If using dried, about 4 tbsp

  • 1 cup chopped dried Dates – Without pits

  • 1 grated Carrot – If desired

  • 1/2 cup Rolled Oats

  • 2 whole Eggs – With shells crushed in for extra calcium

  • ~ 1/2 cup Water – Filtered

  • 2 tbsp Olive Oil

  • 1/4 tsp Cayenne Pepper

  • 1 tbsp ground Ginger – Or 2 tbsp freshly grated


Instructions:



  1. Preheat oven to 225 degrees.

  2. Combine and mix all ingredients in a large mixing bowl. If mixture is too wet to make balls with, add more oats and wait a few minutes after mixing. If mixture is too dry, add a few tbsp of water at a time and mix through.

  3. Make 1 inch balls by rolling with your hands. If mixture is sticking to your hands too much, wet your hands before rolling the balls with cold water.

  4. Arrange them on a non-stick cookie sheet.

  5. Bake in the oven for 1 hour and take a flipper to turn them over on a different side.

  6. If you want softer biscuits for dogs that are old or have dental problems, bake for a shorter time. However, the biscuits should be eaten quicker and stored in the refrigerator. For crispy biscuits, bake until they are dry.


These dog biscuits may be stored in a container on your counter for treat-time with your dog, if baked until completely dry and will last about 1 month.

My mother has always made stuffed peppers since I was little, and they’re one of my favorites – a type of soul food of mine, if you will…


…This recipe is embellished or “snazzed” up from our traditional recipe, but every bit as delicious!

Type: Main Dish
Serve With: Sour cream or plain yogurt
Prep Time: 12 min
Cook Time: 1 hr
Yield: Serves 4


Ingredients:



  • 1 lb lean Ground Beef

  • 3 cups cooked Rice – I like using basmati or brown made with chicken stock.

  • 4 large Peppers – You may use different colors, if you like.

  • 1 Onion – Diced

  • 6 Mushrooms – Thinly sliced; I use shiitake.

  • 1/2 roll of Chevre – Goat cheese

  • 1 can whole Tomatoes – Or you can slice fresh tomatoes

  • 1 clove Garlic – Finely minced

  • 2 tbsp Olive Oil

  • 4 tbsp Red Wine

  • 4 tbsp Chicken Stock – Or water

  • 1 tbsp fresh Parsley – Finely chopped

  • 1/8 tsp Cayenne Pepper

  • Sea Salt – To taste

  • Freshly cracked Black Pepper – To taste


Instructions:



  1. Sautee onions in 1 tbsp olive oil on medium heat for 3 min, then add ground beef and cayenne pepper and brown. (Start cooking rice if you don’t already have it done.)

  2. Right before meat is finished browning, add garlic, mushrooms and parsley and continue until meat is finished. Drain excess oil from meat, if necessary.

  3. Combine beef mixture and rice in a bowl and set aside. Adjust seasoning to taste.

  4. Carefully cut a circle around the stem of the peppers and remove without tearing the pepper. Remove seeds and any excess veins.

  5. Preheat oven to 350 degrees.

  6. Arrange peppers in a deep casserole dish that’s been brushed with olive oil, with hole ends up.

  7. Stuff peppers full to the brim with rice and beef mixture and drizzle 1 tbsp red wine on each pepper.

  8. Top each pepper’s stuffing with 1/4″-1/2″ medallions of chevre and top with tomatoes to completely cover chevre. Adding some of the juice from the can of tomatoes works beautifully.  Photo right: Before adding tomatoes (paprika sprinkled on chevre)

  9. Add chicken broth to casserole dish, cover casserole dish with loose tin foil and bake for 1 hr on 350 degrees or until peppers are soft testing with a knife.

  10. Serve with sour cream or plain yogurt and Enjoy!

Personally, I love English or British food, but many people often complain about their ideas about cuisine…


What expertise people can NEVER take away from the English is their tea!


(You might have seen my posts about my English Nanny and PG Tips! LOL)


They take their tea drinking very seriously…There are specific rules and times they sit down to have tea! It’s an important thread in the quilt of their existence.


I absolutely love tea and this appreciation started with my English nanny, Doreen.


The thing is, in addition, you can’t simply have tea without enjoying a “bickie” or biscuit. So, be sure you stock up on Christmas biscuits because ’tis the season!


The English are experts in tasty treats like that, namely shortbreads are my favorite.


Another thing my nanny always made sure of was that there were tasty candies around the house.


That may be why we love to make toffee and fudge this time of year.


So, this was intensified around the Holidays. So, in English spirit, break out your Christmas candy and enjoy them! Don’t save them for a special occassion – it is the most precious of occassions!

Ask my husband and he’ll tell you his favorite meal I make for him.


Every single birthday or special occassion, he asks me to make homemade macaroni and cheese, alongside mushrooms with port wine and balsamic sauce. Strange, but true! It’s his 2 favorite dishes I make in one…LOL


Ingredients:
24 oz. Mushrooms – Use a variety of different mushrooms – Sliced
1 Onion – Diced
1 large clove Garlic – Or 2 smaller ones, finely minced
1 1/2 tbsp Olive Oil
1 tsp Butter
1/4 cup Port Wine – Cooking Sherry or another fortified red wine
2 tbsp Aged Balsamic Vinegar – Aged from Modena is best.
4 leaves fresh Basil – Chiffonade
2 tbsp fresh Parsley – Chopped
1/2 tsp Oregano
1/4 tsp Red Chili Flakes
Freshly Cracked Black Pepper – To taste
Sea Salt – To taste


Instructions:
1. Heat a large frying pan to medium heat with olive oil.


2. Once it’s hot, add onions and sautee for about 4 minutes.


3. Add mushrooms, chili flakes, black pepper and oregano (if dried) and continue to sautee until mushrooms starte to sweat and leach their water.


4. Add garlic and sautee for an additional 2 minutes.


5. Add port wine, balsamic vinegar, fresh herbs. Stir and reduce until it’s not too saucy anymore.


6. Finish with butter by stiring it in thoroughly.


7. Serve on top of pasta, as a side dish or on top toast with this mixture and Enjoy!

How Can Reishi Mushrooms Benefit You?

It’s not a big secret that mushrooms have been known to be very good for you. Reishi mushrooms are one of the top three medicinal mushrooms that has been used for centuries in ancient Asian cultures. The great thing about the Reishi mushroom is the balance it gives to both your body and mind.


This ancient ingredient has been used to help treat many ailments such as liver disorders, bad circulation and for cardiovascular health. Though, the most common use for the Reishi mushroom is for people suffering from asthma or other respiratory problems. Basket of Wild Mushrooms


These may very well be the tastiest morsels to pop into your mouth. They just burst with flavor!

Type: Appetizer
Serve With: By themselves or with an arrangement of cherry tomatoes or other hors d’oeuvres
Prep Time: 12 min
Cook Time: 30 min
Yield: ~ 4 dozen small muffin size, ~ 1.5 dozen large muffin size


Ingredients for Tassie Shells:



  • 1 slice Bread per tassie with crusts removed – When using small muffin tin; When using large muffin tin, use 2 pieces of bread per reservoir

  • Cooking Spray, Butter or Oil – To grease muffin tins


Ingredients for Mushroom Filling:



  • 3 cups medium Mushrooms – Chopped; using a variety of mushrooms is best & tastiest

  • 2 1/2 tbsp Butter

  • 2/3 cup Heavy Cream

  • 2 tbsp White Wine

  • 1 1/2 tsp Garlic – Minced

  • 1/4 tsp Sea Salt

  • 1/4 tsp Onion Salt

  • 1/2 tsp Cayenne Pepper

  • 1/2 tsp freshly cracked Black Pepper

  • 1 tbsp freshly Parsley – Finely chopped

  • 1 1/2 tbsp All-Purpose Flour


Instructions to make Shells:



  1. Preheat oven to 350°.

  2. Using a rolling pin, roll over each slice of bread with crust removed until each slice is well compressed. * Tip: You may leave the pieces square or use a round cookie cutter to create rounded shells. They’re wonderful either way.

  3. Small muffin tins are preferred: Place bread into each non-stick muffin reservoir pressing your prepared slices gently into the lightly greased forms to create a cup and allow the edges to come up over the sides. Large muffin tins: You’ll need 2 slices of bread overlapped to make a complete shell. Place pieces of bread to overlap in the middle into each non-stick muffin reservoir.

  4. Bake in oven until cups are golden and firm – approximately 6 minutes, depending on your oven.

  5. Remove from oven and allow to cool for 5 min before removing them from the muffin tin and arranging them on a cookie sheet.


Instructions to make Mushroom Filling:



  1. Sautee prepared chopped mushrooms inn butter for 10 min on medium heat.

  2. Add garlic, sea salt, onion salt, cayenne pepper, black pepper and sautee for another 5 min.

  3. Sprinkle flour on top and continue to sautee until it’s uniformly incorporated.

  4. Add wine and continue to sautee for 1 min continually stirring.

  5. Add heavy cream and stir until nicely thickened.

  6. Sprinkle parsley on top and stir through. Remove from heat.

  7. Either fill bread cups, or refrigerate or freeze filling for future use.



  • Place filled cups on cookie sheet and heat for 6 minutes  350°.

  • Keep checking on them during heating to be sure they don’t get too brown.

  • Serve alone or with an arrangement of fresh cherry tomatoes.

  • Enjoy!
